Predictive microbiology models, which are intended to describe the response of pathogenic bacteria to the combined effects of processing specifications, product characteristics, and storage conditions, can be highly valuable for managing microbial food safety. Usability of models can be improved by including them in user-friendly food safety software tools, designed for specific target users. For selecting the most suitable software tool for a specific need, detailed information should be provided. Here, the capabilities of the predictive microbiology Praedicere Possumus (PP) software tool are illustrated and used to describe how deterministic predictions of pathogen behavior can be obtained. The PP is intended to assist Food Operators in identifying the hazards able to grow in a particular food or food category and in evaluating the combinations of environmental conditions that prevent their growth. Features are also included for assessing the behavior of each specific pathogen through the processing steps and along the food chain, providing estimates of the microbial responses to processing and storage conditions.
