<p>The present study was conducted to examine the comprehensive melissopalynological, physicochemical, and mineral prospectus of <i>Apis mellifera</i> L. unifloral honeys obtained from different agro-climatic zones of Himachal Pradesh, India. The melissopalynological studies were used to identify the floral origin of the collected honey samples, which were further subjected to various quality parameter analysis by using standard procedures and protocols. Out of all honey samples, ten honeys were identified as unifloral honeys with predominant pollen grains of <i>Justicia</i> sp.<i>, Dalbergia</i> sp., <i>Eucalyptus</i> sp., <i>Syzygium</i> sp., <i>Sapindus</i> sp., <i>Callistemon</i> sp., <i>Robinia</i> sp., <i>Aesculus</i> sp., <i>Plectranthus</i> sp., and <i>Thymus</i> sp. Among all the honeys, <i>Robinia</i> honey exhibited the lowest pH (4.09), moisture content (14.60%), and 5-hydroxymethylfurfural (HMF) (25.41&#xa0;mg/kg), signifying its freshness. Proline content was high in <i>Eucalyptus</i> honey (95.26&#xa0;mg/100&#xa0;g). <i>Justicia</i> honey had the highest levels of calcium (104.63&#xa0;mg/kg), zinc (8.30&#xa0;mg/kg), and iron (6.08&#xa0;mg/kg), indicating its substantial nutritional value. <i>Thymus</i> honey was rich in phenol content (106.07&#xa0;mg/100&#xa0;g) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) content (77.45%), indicating its good antimicrobial and antioxidant properties, offering great potential in the pharmaceutical industry. The bacterial load found in all the samples was within the safety limits for consumption (2.3–4.32log CFU/g). All the honeys met FSSAI safety standards and showed no adulteration, ensuring the purity and good storage practices adopted by the beekeepers of the state. Within the obtained unifloral honeys, <i>Thymus</i> and <i>Plectranthus</i> honeys originate from unique high-altitude flora of the northwestern Himachal Pradesh, making them especially well-suited for region-specific geographical indication (GI) tagging and global market expansion.</p> Graphical Abstract <p></p>
