Exploring the Physicochemical Properties and Nutritional Value of Abundant Seaweed Species Along the Jepara Coast, Indonesia

This study analyzed the proximate compositions, mineral contents, functional chemical groups, and physicochemical analysis of abundant tropical edible seaweeds from the Jepara Coast, Indonesia. To our knowledge, this is the first study in Jepara to characterized the seaweed. Six tropical seaweeds: Rhodophyta (Kappaphycus alvarezii, Gracilaria verrucosa, and Halymenia durvillae), Chlorophyta (Caulerpa racemosa and Halimeda macroloba), and Phaeophyta (Sargassum polycystum) from Jepara, Indonesia were collected and analyzed for their morphological characteristics. Among the six seaweeds, G. verrucosa and H. durvillae showed the highest protein contents (12.36% and 12.83%, respectively), while G. verrucosa also exhibits the highest carbohydrate level (55.99%) and WHC (6.66 gg⁻¹). Mineral analysis highlighted essential nutrients such as sodium, magnesium, calcium, and potassium, which are crucial for human health and contribute to the nutritional value of these seaweeds. Functional groups identified through Fourier-transform infrared spectroscopy (FTIR) indicated the availability of bioactive compounds. This comprehensive assessment underscores the nutritional potential of tropical edible seaweeds in Jepara and their importance as a sustainable food source for local communities while contributing to broader discussions on marine biodiversity and conservation efforts in Indonesia.
