Comparative Seasonal Nutrient Profiling of Telescopium telescopium–A Sustainable Underutilized Food Resource With Crassostrea madrasensis: From the Mangrove Ecosystem of Southern Kerala, India

Molluscs constitute an important faunal component in the food web of the mangrove ecosystem. The Indian backwater oyster, Crassostrea madrasensis and the telescope snail, Telescopium telescopium, are abundant in the mangrove regions of Kerala. C.madrasensis is a preferred food item, but T.telescopium is not included in the food table and a very little information is currently available on the nutritional value of this potamidid snail. The study investigated nutrient potentiality of T.telescopium comparing the meat yield and biochemical compositions with C.madrasensis across two different seasons, pre-monsoon and monsoon. Proximate composition on dry matter basis was evaluated for two seasons. The results revealed significantly higher meat yield percentage from T.telescopium than C.madrasensis. The water temperature, pH, salinity and suspended solids showed significant seasonal variations (p < 0.05). The crude fat, fibre, ash, acid-insoluble ash, and carbohydrates showed significant seasonal variations (p < 0.05) in C.madrasensis whereas, in T.telescopium crude protein also varied significantly in the study period. Interactive variations of major nutritional components revealed highest protein level in C.madrasensis (35.04 ± 0.92%) with no significant variation with T.telescopium during the monsoon season. The crude fat was significantly higher in C.madrasensis (16.98 ± 0.35 to 11.45 ± 0.35%) compared to T.telescopium (3.42 ± 0.17 to 1.33 ± 0.06%). The levels of carbohydrate observed distinctly higher in T.telescopium (48.5 ± 0.3%). A strong positive correlation of carbohydrates with suspended solids, salinity, and temperature was also recorded. Overall study reveals that these molluscan species are good source of protein and carbohydrates and need to be sustainably exploited for human consumption.
