<p>Olive mill waste cake (OMWC), a major solid by-product of the olive oil industry, contains bioactive compounds such as polyphenols and presents potential for value-added applications. This study explores the extraction of vegetable oil from OMWC using Soxhlet with hexane and methanol as solvents, and investigates the oil’s antibacterial and antioxidant activities. Antioxidant capacity was evaluated via the DPPH assay using the methanolic extract (METPM), while antibacterial efficacy against <i>Escherichia coli</i> and <i>Staphylococcus aureus</i> was tested with the hexane extract (HEXPM). Polyphenolic profiling by LC–MS/MS revealed catechin and its derivatives as dominant compounds, with METPM showing greater diversity. Results demonstrated significant antioxidant activity and weak antibacterial effects, highlighting the potential use of such extracts in pharmaceutical or food-related formulations.</p>
