Effects of artificial light quality on health-promoting compounds in broccoli sprouts

Glucosinolate (GSL) is contained in large amounts in Brassica vegetables, and has various positive effects including anticancer activity. The aim of this study was to elucidate the effect of artificial light quality on the potential enhancement of health promoting compounds in broccoli sprouts. Eight-day old broccoli seedlings were treated with a fluorescent, 5 single LED lights (red, blue, far-red, warm white, and cool white), and 4 red/blue/far red mixed lights (R: B = 8:2, R: B = 8:2 + R/FR0.7, 1.0, 1.3) for 7 days. The agronomic characteristics and content of glucosinolates (GSLs), hydrolysates, total phenol, total flavonoid, antioxidant capacity, myrosinase activity, and nitrile formation were analyzed. The results showed the positive changes in both the agronomic characteristics and health promoting compounds under various artificial light quality conditions. Fresh weight and dry weight of the broccoli sprouts increased in red light while total phenol and total flavonoid contents increased in blue light. Similarly, hypocotyl length, antioxidant activity, GSL content, and hydrolysate compounds increased in far red light. In the case of the mixed light quality treatment, FR 1.3 exhibited the highest GSL content, and the total phenol, total flavonoid, and antioxidant activities tended to increase with increasing FR. Specifically, the GSL content tended to decrease as the ratio of FR increased. There was no significant relationship between myrosinase activity and nitrile formation rate in both single and mixed light treatments. Summarizing the results of this study, it was possible to change the phenotype and phytochemicals of sprouts in a positive direction using single and mixed artificial light.
