A comprehensive review on extraction methodology for utilization of pigments from the waste of fruit and vegetable industry

There has been significant increase in the production of fruits (52%) in last one decade throughout the World. During processing, huge amount of waste has been generated by food industries. Being perishable in nature, fruit and vegetable waste account for more than 42% of total food wastage globally. A significant research has been continued for the effective utilization of waste which impact the environment and the economy. The waste can be utilized for the extraction of valuable bioactive components. The pigments from natural sources are in high demand because of the health risks associated with synthetic pigments. The extraction of pigments can be employed by conventional and non-conventional methods. The use of non-conventional techniques significantly enhanced the yield of pigments and reduced the energy input, processing time, wastage etc. The extraction methods can be selected on the basis of pigment stability, operating cost and producing waste. The pulsed-electric field extraction emerges as a better approach due to its suitability for heat sensitive pigments and increase in the yield of pigments. The vacuum microwave assisted extraction results in less degradation rate and high yield of pigments. Additionally, the combined techniques produce better results as compared to the method used alone.
