Nutritional content and amino acid profile of edible insects (Lethocerus indicus, Dytiscus marginalis, and Odontotermes feae) consumed by ethnic communities of Assam, India

Entomophagy is a common practice among ethnic communities of Assam, India. This study examines the nutritional composition of Lethocerus indicus (giant water bug, GW), Dytiscus marginalis (great diving beetle, GD), Odontotermes feae (termite). While previous analyses focused largely on proximate and mineral contents, amino acid profiling and molecular protein distribution of these insects are proposed first time. They are protein-rich sources, ranging from 28.875 to 16.712%, other nutrients (carbohydrates and lipids) and energy contents (874.638 ± 5.313 to 1634.001 ± 10.701 kJ/100 g). GD displayed the highest amino acid content, followed by Termite and GW. Abundant non-essential (NEAA) and essential amino acid (EAA) in all three insects were Proline and Lysine, respectively. However, only Termite fulfilled the FAO/WHO recommended standards of EAA as 40% and essential to NEAA ratio of 0.6. Leucine and Valine, respectively, are the limiting amino acids in all insects for all age groups. SDS-PAGE showed five protein fractions: actin-arginine kinase, cuticle proteins, heat shock proteins, hemocyanin, and myosin. Smeared bands < 20 kDa were absent, confirming negligible proteolysis. Further research is crucial to emphasize insects as future sustainable human and animal feed, thereby enhancing food security and boosting the insect industry.
