<p>Hydrocolloids are polysaccharides or proteins with long chains of hydrophilic molecules that can form gels in water-based solutions. Hydrocolloids are utilized as stabilizing, gelling, thickening, foaming, and emulsifying agents to design the texture and nutritional profile of food formulations. Hydrocolloids can be obtained from plant and animal parts by extraction techniques. Among these sources are plant seeds which are usually rich in lignocellulosic biomass. Therefore, strategies to recover target hydrocolloids from a lignocellulosic matrix must be implemented using suitable extraction methods and conditions. This study reviewed the effects of different extraction methods and conditions on the techno-functional properties of hydrocolloids sourced from plant seeds. The results indicate that the drying and purification extraction methods significantly influence physicochemical properties, including viscosity, contributing substantially to their techno-functional characteristics. Most plant seed hydrocolloids exhibit elastic and pseudoplastic shear-thinning properties. However, in most instances, the rheological characteristics were unaffected by the extraction method. Other processing factors, such as the pretreatment techniques and their effects on extraction outcomes, are discussed. This study provides insights into how different methods and conditions could affect the properties of commercially important plant seed hydrocolloids, which can inform suitable methods and conditions that will provide products with the desired qualities. Future research advancements in the effective application of plant seed hydrocolloids are also highlighted. Future research should explore the synergistic effects of the bioactive constituents of plant seed hydrocolloids to enhance the antioxidant capacity of formulated foods.</p> Graphical Abstract <p></p>
