<p>Palmyra fruit pulp, which is rich in essential nutrients, antioxidants, and dietary fibre, is an underutilized resource with significant potential for sustainable product development and economic diversification. This study provides a comprehensive physical and bioactive properties of Palmyra pulp-based leather and its derivatives, aiming to elucidate their nutritional composition and functional properties. Leather was developed using Palmyra pulp with six different sugar additives: 20% and 30% cane sugar and coconut sugar, a 20% concentration of coconut inflorescence sap (neera) honey at 75 °Brix, and a 20% concentration of cane sugar syrup at 75 °Brix. The proximate, biochemical and sensory properties were analysed to identify the most effective formulation. The results indicated that the formulation with 30% coconut sugar had the most favourable nutritional profile (carbohydrate (11.3%), reducing sugar (0.59%), fat (3.31%), protein (24.77&#xa0;mg/100&#xa0;g), DPPH radical scavenging capacity (32.13&#xa0;mg TE/100&#xa0;g), FRAP content (0.74&#xa0;mg TE/100&#xa0;g), and vitamin C (36.6&#xa0;mg/100&#xa0;g)) overall, while the 20% neera honey formulation demonstrated superior antioxidant activity and obtained the highest sensory acceptance rating. These findings suggest that incorporating 30% coconut sugar enhances the quality of Palmyra pulp-based leather, making it a viable option for sustainable leather production.</p>
