Metrological support for accurate measurements of the concentration of nitrosamines in food products: nitrosamine state reference standards and measurement procedures

Accurate measurements of the content of nitrosamines in food products, pharmaceuticals, and water can guarantee the quality of these products and drinking water. In order to provide accurate measurement results to the population, it is necessary to have or create (if none are available) metrological support tools and methods that guarantee accurate measurement results. By the time of commencing the work to create samples of nitrosamine reference standards to ensure food quality, the validity period of the previously created reference standards had expired many years ago, i.e. there were no means of metrological support. This paper is dedicated to determining the content of nitrosamines in food products using measurement procedures and reference standards, and involves addressing the issues of ensuring metrological traceability of the nitrosamine measurement results. As a result of performed studies, the nitrosamine content in the reference standards was determined, enabling the accurate measurement of the nitrosamine content in food products. The paper consists of four interrelated parts aiming at finding answers to the tasks outlined above. The characteristics of the developed reference standards of the following composition were determined: N‑nitrosodimethylamine (NDMA), N‑dipropylnitrosamine (DPNA), N‑nitrosodiethylamine (NDEA), along with the certified measurement procedure. The obtained results are important in terms of developing and applying the reference standards of nitrosamine compositions, and certifying the measurement procedures in order to meet the needs of the national economy. Methods and means of metrological support to ensure the possibility of measuring nitrosamine content in food products have been created.
